Vanilla flan recipe: Vanilla flan is one of those childhood desserts even grown-ups go crazy for. Believe me or not, flans are known to be the divas of the dessert world.

This creamy, silky, and easy vanilla flan recipe is perfectly sweet with a light and delicate texture, topped with perfect dark amber color caramel.

It’s just as easy to make from scratch as it is to open up a box. In this post, I will share with you how to make rich smooth caramelized Vanilla flan that will definitely be a show stopper. We are gonna go a little high on calories here, but the wonderful taste definitely worth it all.

What is vanilla flan?

Flan is a flat pie prepared with egg, sugar, and milk custard poured over the pan with dark caramelized sugar coating at the bottom.

As the custard cooks, the caramelized sugar melts and flavors the custard. The flan is turned over for serving to get the beautiful brown caramel on top. Basically, Flan is the French Creme Caramel.

What are the ingredients for flan?

  • 4 eggs
  • 400 ml milk
  • 100 ml evaporated milk
  • 1/2 cup milk powder
  • 3/4 cup sugar
  • 1 tsp vanilla
  • 1 tsp rose water

For caramel

  • 4 tbsp sugar

How to make vanilla flan?

Before we start making custard, we will make caramel for the flan which is the wonderful thin layer of caramel at the bottom of the pan which will eventually become the top of the flan when it is served.

Start by heating the granulated sugar on low flame. Keep swirling the pan for the sugar to melt evenly. Never use the spoon to stir the caramel, because it forms crystals on the spoon and messes up the entire caramel.

It will take around 5-6 minutes to get the amazing dark caramel color which will give a fantastic flavor to our flan at the end.

Carefully, using the kitchen tong, shake and swirl the pan when the sugar is melting so that the sugar melts and covers the bottom of the pan evenly. Continue till a nice dark amber color is obtained. Now set it aside to cool.

Note: Be extra careful while making the caramel. If the hot caramel gets on your skin, it will stick and crystallize on the skin which will become extremely painful for it to get off.

Custard preparation for flan:

In a bowl, beat eggs with sugar, milk powder, vanilla essence, and rose water (not Rose essence) until smooth.

Believe me, adding the Rose water to the flan will neutralize the smell of egg without affecting the taste of flan. I sometimes use 2-3 tsp of rose water if I feel the eggs still have their odor and it really helps to get rid off it.

Now add whole milk and evaporated milk. Mix well

Pour the custard over through the sieve on the hardened caramel. 

Fill the steamer with 4 cups of water. Bring to a boil then place the pan on the steamer, close the lid of the steamer and steam for exactly 15 mins on high flame.

(Fill the large roasting dish with an inch of hot water, place the pan in. Place the pan at the centre rack and bake at 325F for about 40 minutes or until the flan is jiggly)

Carefully remove the pan from the streamer or the oven. Allow it to cool for 20 minutes and refrigerate for at least 2 hours before serving.

It is really a good idea to make this a day advance. If you are having a dinner party, make this a night before and it will be perfect the night off.

The trick to getting the flan out of the pan is to loosen it from the edge. Take a knife and glide it at the edge of the pan. Now gently shake the pan and make sure the flan is spinning.

Flip the serving plate over on top of the pan and then hold both plate and pan tightly and give it a quick flip. Tadaa!!! there you have a beautiful vanilla Flan.

Is flan the same as cheesecake?

No it is not the same. Flan is a pie without crust. It has a topping of caramel layer at the top, where as cheesecake is a pie with crust similar to a butter cookie with the rich creamy filling made from either ricotta or crème cheese.

How do you know when flan is done?

If you are steaming the flan, it will be ready in exactly 15 minutes when cooked on a high flame. The flan will get firm on the side (not solid) but still remain jiggly in the center, that’s when you know the flan is done.

But if you bake the flan in the oven, it will take around 40 minutes at 325 F, place in the center rack. It is best to remove the flan out of the oven when the center is still jiggly because it will get firmer and creamier when cooled.

Overcooking the Flan will make the flan little rough and less creamier.

Should flan be covered when baking?

I only cover my custards if my only option is to bake them in a oven. I think it preserves the moisture and prevent the top from browning. You may cover the flan with aluminum foil or a pan lid while steaming as well but I do not find it necessary as covering or no covering gets you the same flan.

Note that I’m here talking about covering the pan with aluminum foil or lid. The steamer however should be close while steaming the flan.

  2. Now add whole milk and evaporated milk to the egg mixture. Mix well

  3. Pour the custard over through the sieve on the hardened caramel.

  4. Fill the steamer with 4 cups of water. Bring to a boil then place the pan on the steamer, close the lid of the steamer and steam for exactly 15 mins on high flame.

    Oven Instructions: Fill the large roasting dish with an inch of hot water, Place the pan in. Bake at 325F for about 40 minutes, on center rack.
