Ingredients
  • 250 grams Chicken Breast
  • 1 sprig Baby lettuce
  • 1 small Jicama (peeled and cubed)
  • 200 grams sweet corn
  • 1/3 cup barbeque sauce
  • 1 small tomato (chopped)
  • 1/8 cup mayonnaise
  • 1/4 cup Canned black beans, drained and rinsedtaste
  • 1/3 cup Chopped coriander leaves
  • 1/2 teaspoon Ginger garlic paste
  • 1/2 teaspoon Black pepper powder
  • 1/2 teaspoon vinegar
Instructions
  1. Marinate chicken breast with salt, ginger garlic paste, vinegar and black pepper powder, for minimum 30 minutes.
  2. Grill or barbecue the marinated chicken breast for 8 to 10 minutes or until cooked. Remove and cool and then cut into 1/2 inch cubes
  3. In a bowl, add barbecue sauce and mayonnaise. Mix well.
  4. To the same bowl, baby lettuce, jicama, sweet corn and chopped tomatoes. Mix well and serve fresh.
