Shredded bbq chicken salad: This is a cool and refreshing salad to prepare at home, which is made by a combination of tender chicken, vegetables, salad dressing, and herbs.
It is a year-round favorite recipe but it’s perfect for spring and summer when you want a chilled salad that’s also tasty and good enough to fill you up.
It is great for lunch or even dinner and is a personal favorite in our household and could not be any easier to make. This is the recipe I grew up eating and my mum used to make it all the time, and I cant wait to share it with you.
HOW TO MAKE SHREDDED CHICKEN BBQ SALAD?
Simply marinate chicken breast with salt, ginger garlic paste, vinegar and black pepper powder, for minimum 30 minutes. Grill or barbeque of 10-15 minutes until chicken is cooked through, flipping every 2 minutes.
Meanwhile, in a bowl, add baby lettuce, peeled and cubed Jicama, sweet corn, chopped tomatoes, black beans, coriander leaves, mayonnaise, and barbeque sauce and combine well.
Finally, cut the barbequed chicken into bite size cubes and add it to the bowl of veggie mixture. Serve fresh.

- Grill or barbecue the marinated chicken breast for 8 to 10 minutes or until cooked. Remove and cool and then cut into 1/2 inch cubes
- In a bowl, add barbecue sauce and mayonnaise. Mix well.
- To the same bowl, baby lettuce, jicama, sweet corn and chopped tomatoes. Mix well and serve fresh.
