How to boil potatoes perfectly?

Potatoes can take anywhere between 12-30 minutes to cook depending on the size of the potato.

Clean the potatoes under running water and place them in the pot. Add cold water and season with a little bit of salt and bring to boil.

Small potatoes get cooked as less in 12 minutes. While the large potatoes take about 30 minutes.

Alternatively. You can always cut potatoes into halves and make the cooking process faster. Make sure to cut them in equal size so that they get cooked evenly.

If the potato is very big, then you may go ahead and cut it into 4 pieces as well.

If you are in hurry, you can also microwave the potato for 6-8 minutes and they will be done.

Now allow the potatoes to cool. Once cooled, gently take off the potato peeling. A well-cooked potato is very easy to peel. Easy peeling is the sign that the potato is perfectly cooked.

Note: For best results, boil the potato a night before or at least 2-3 hours before and refrigerate it to get rid of excess moisture.

How long the Potato filling stay fresh in the fridge?

Potato filling easily lasts for 3-5 days in the fridge, if you have placed it in 2-3 hours of making. Never leave the potato filling on the countertop overnight because bacteria can quickly turn them sour. Then refrigerating the next day wouldn’t make sense.

Which cheese can I use for the potato sandwich recipe?

I have used shredded cheddar cheese, but feel free to use cheese slices or shredded mozzarella, or processed cheese cubes, they all go great with potato sandwich. You can also use cottage cheese(paneer) or totally skip adding cheese, it is all up to you.

How to make green chutney

Green chutney makes a good combination with potato sandwich. But it is totally optional. They can be served with tomato ketchup as well. In case you want to give green chutney a try, here is what you have to do.

In a mixer jar, add 2 cup coriander leaves, 1 green chili, ½ inch ginger, ½ tsp lime juice, ½ teaspoon cumin powder, ½ teaspoon chaat masala, ½ teaspoon salt, or as required, 1- 2 tsp of water. Grind it into a smooth paste
