Kheer Recipe (Rice Pudding)

This Rice kheer recipe is easy to make. All you need is somebasic ingredients and some patience while stirring it to the right thick consistency. 

  • 1 liter Milk
  • 1/4 cup Basmati Rice
  • 5 tablespoons sugar
  • pinch Saffron strands
  • 1/2 teaspoon Cardamom powder
  • 1 cup Mixed nuts (Almond, Cashew, pistachio)
    1. Slightly grind rice on pulse and soak it for 20 minutes. Grind the nuts in a food processor.
    2. In a pan, bring milk to boil and add soaked rice and cook on medium flame while stirring the mixture.
    3. Once it starts getting thick Add sugar, saffron and nuts into the kheer and keep stirring continuously.
    4. When it reaches the desired consistency, add cardamom powder and Garnish with chopped nuts.
    5. Pour the kheer into small dessert cups and refrigerate. Once the kheer is chilled, Rice Kheer is ready to be served!
    Adjust the amount of sugar according to your preference.

Rice Kheer can be had hot or cold. Traditionally they are had cold, and I also think Rice kheer tastes best when chilled. A refreshing healthy dessert for cold dessert cravings.
