Kheer is a delicious rice pudding that is made from milk, basmati rice and nuts. Kheer was first introduced to me by my Pakistani neighbour. She would make them during Ramadan and bring it home for iftar.
Aunt’s kheer was loved by everyone at home, she made the best kheer one could have. My brother doesn’t like sweet stuff, he doesn’t like macrons! what? I know! however he loves this dessert. He’ll have it over and over for three days straight. I think it’s because kheer has that right balance of sweetness with rich cream texture and all the nutty flavors incorporated so well.
I have had kheer at various restaurants and even at some parties but nothing would match that tasty kheer that Aunt made.

what does kheer taste like?
kheer tastes very rich and creamy with flavors from nuts and milk. It also has that cardamom smell that mostly every Indian dessert has. You cant make out that its made from rice, because rice is usually had for meals and you wouldn’t think of it in a dessert, right? But it tastes delicious, surely give it a try!
When should we eat kheer?
Eat kheer as a dessert after your meals or it can also be had as a mid day meal. It’s great to have them at parties during summer, chill the kheer and serve it. It will be the star in the dessert section.
How do you know when kheer is done?
while cooking, you have keep stirring the kheer and checking the consistency. The rice has to be cooked till it’s soft and mushy. Continue cooking till kheer gets thick. Also remember that, kheer will thicken farther more when placed in the fridge.
How long does kheer last?
kheer will last for up to 3 days in the refrigerator. It will start to loose water after that, but will not go bad if cooked well for up to 5 days.

Kheer Recipe (Rice Pudding)
This Rice kheer recipe is easy to make. All you need is somebasic ingredients and some patience while stirring it to the right thick consistency.
Adjust the amount of sugar according to your preference.
- Slightly grind rice on pulse and soak it for 20 minutes. Grind the nuts in a food processor.
- In a pan, bring milk to boil and add soaked rice and cook on medium flame while stirring the mixture.
- Once it starts getting thick Add sugar, saffron and nuts into the kheer and keep stirring continuously.
- When it reaches the desired consistency, add cardamom powder and Garnish with chopped nuts.
- Pour the kheer into small dessert cups and refrigerate. Once the kheer is chilled, Rice Kheer is ready to be served!
Rice Kheer can be had hot or cold. Traditionally they are had cold, and I also think Rice kheer tastes best when chilled. A refreshing healthy dessert for cold dessert cravings.
