Ramadan Special Series, Recipe 18 – Pink Sauce Pasta

Ingredients

To Boil the Pasta

  • 1 Tsp oil
  • Salt to taste
  • 1 Cup good quality pasta
  • Cold water

For White Sauce

  • 2 Tbsp butter
  • 1 Tbsp all purpose flour (maida)
  • 1 Cup milk
  • 2 Cheese slices (Optional)
  • Salt to taste

For Red Sauce

  • 2 Medium-sized boiled tomatoes
  • 2 Tbsp oil
  • 1 Tsp crushed garlic
  • 1 Medium-sized finely chopped onion
  • 1 Tsp red chilli powder
  • 1 Tsp black pepper powder
  • 1 Tsp oregano (optional)
  • 1/4 cup water
  • 1 Tbsp tomato ketchup
  • Salt to taste
  • 1 Medium-sized diced capsicum

Step 1 – Boil the pasta following the instructions on the packet. Set aside

To make white sauce

Step 2 – In a pan, melt the butter on the medium flame. Next, add all-purpose flour and stir continuously for 30-45 seconds. Now, pour milk little by little while stirring continuously with a whisk.

Once the sauce starts to thicken, add slices of cheese, stir for 1 minute. Switch off the flame and set aside.

Preparing red sauce and assembling

Step 3 – Boil the tomatoes for around 10 minutes. Once done, let it rest to cool. Now skin the tomatoes and run in the blender to make a puree. Set aside.

Step 4 – In a pan, add 2 tbsp oil and add crushed garlic, saute it for few seconds. Then add chopped onions, and saute till it becomes light brown in colour.

Step 5 – Now add previously prepared tomato puree and saute it for another 2 minutes. Then add red chilli powder, black pepper powder and oregano, mix well. Next, add little water, tomato ketchup and salt to taste, cook further for 5- 7 minutes until oil separates. Then add chopped capsicum and cook for 2 minutes.

Step 6 – Now pour the prepared white sauce in the pan, mix well and add boiled pasta, stir and cook for 2 more minutes and serve hot. Enjoy!
