Ramadan Special Series, Recipe 12 – Chicken Frankie

This delicious Chicken Frankie, loaded with lots of veggies and protein will steal your guest’s heart for sure. Not only your kids will fall in love with this, but it will also satisfy the meal-eaters of every age! Trust me, I’m not exaggerating unnecessarily, try out and evaluate yourself. Enjoy this wonderful, aromatic, finger-licking, mouth-watering chicken Frankie bursting with flavours. Let’s get cooking…

For Chicken Fry

  • 500 grams chicken
  • 2 Tbsp Yogurt
  • 1 Tbsp, ginger garlic paste
  • 1 Tsp pepper powder
  • 1 Tbsp, lemon juice
  • 1 Tbsp red chilli powder
  • 1 Tsp, garam masala powder
  • 1 Tsp, cumin powder
  • 1 Tbsp, oil
  • salt to taste

1. In a mixing bowl, add chicken and rest of the ingredients. Mix well and allow it to rest for 30 minutes to 1 hour.

2. In a frying pan, add 2 Tbsp oil, fry the chicken until cooked. ( Or you can deep fry the chicken)

3. Let the chicken cool, now shred the chicken into small bite-size pieces. Set aside.

For Tortillas

  • 1 and half cup, all purpose flour (maida)
  • 3 Tbsp, clarified butter (ghee)
  • 1 Tsp salt
  • water
  1. In a bowl, add all purpose flour, salt, ghee and rub it into the flour. Now add water, little by little and knead it to form a soft dough. Cover and allow it to rest for 15 minutes.
  2. After 15 min. remove the cover and knead for a minute. Now divide the Dough into equal size balls.
  3. Take one ball, dust in some All Purpose Flour and roll to form Rotis (Tortillas).
  4. Heat the pan, and cook slightly on both side, till you see the dough color change and bubbles start to appear.
  5. Keep Tortillas aside.

For the filling

  • 1 medium sized capsicum, finely chopped
  • 1 small cucumber, finely chopped ( I have used seedless)
  • 1 medium sized carrot, finely chopped
  • 1 small onion, chopped
  • salt to taste
  • 2 Tsp, black pepper powder
  • 1 Tbsp, lemon juice

1.In a bowl, add all veggies, salt, black pepper powder, lemon juice and mix well. Set aside.

Note: You can cut and keep aside all vegetables before, but add salt, and lemon juice just before the use, so that veggies don’t release water.

For Sauce

Add 2 Tbsp garlic mayonnaise and 2 Tbsp of tomato ketchup. Mix well and set aside.

Assembling

Place the Tortilla on a flat board or a plate and apply the sauce all over the it. Now place the veg filling, diagonally on the tortilla, as shown. Top it with the generous amount of shredded chicken. Fold from both the sides.

Lastly, heat a pan and cook the wrap from both the sides and serve hot.

Ramadan Special Series Recipe 11 – Tender Coconut Glass Pudding

Tender coconut glass pudding will gives you special taste with tender coconut water and it’s flesh mix. Tender coconut tastes way more better in desserts than eating it raw. Here is the tastiest and easiest pudding recipe.

Ingredients

  • Tender Coconut Water – 2 Cups
  • Tender Coconut Flesh – 1 Cup
  • Agar/China Grass – 6gm
  • Sugar – 6 tbsp
  • Milk – 5 tbsp
  • Condensed Milk – 1/4 Cups
  • Fresh Cream(Optional)

Method:

1. First Separate tender coconut water and tender Coconut flesh. Now start boiling tender coconut water, to the boiling water add china grass and sugar. Boil till china grass melts and mix well.

2. Strain the tender coconut and china grass mixed boiled water to pudding vessel. Bring it to room temperature.

3. Blend tender coconut flesh, 5 tbsp milk and condensed milk as per your sweetness in a blender to a creamy mixture. Also you can add fresh cream to the same creamy mixture to taste even more(optional).

4. Refrigerate both tender coconut strained water and creamy mixture for one hour.

5. Cut the refrigerated hardened tender coconut water pudding into small glass pieces and add the glass pieces to a refrigerated creamy mixture.

This dessert sets super quick and tastes great when cooled well. Now it’s ready to serve.

Ramadan Special Series Recipe 10 – Easy Chicken Puff pastry

This Delicious Chicken puff pastry recipe is easy to make and works best for ramazan because it is baked and you can work on other things while the puff pastry is baking.

We use frozen vegetables in this recipe and here’s why.

Frozen vegatables are usually snap frozen very soon after they are picked. The nutrients are ‘frozen in’ during this process, meaning you can quite easily have more vitamins in a frozen vegetable than in its ‘fresh’ counterpart. Unlike canned vegetables, frozen veggies do not contain preservatives. There is more to frozen veggies than just vitamins, Using frozen vegetables reduces cook time, since they are soft. You can dice your fresh vegetables and freeze them in an airtight bag, instead of having piles of limp and discoloured veggies in your fridge by the end of the week. Especially during this pandemic, its better to stock up and not go out for grocery shopping every week.

Chicken puff pastry

Ingredients:

  • 12 Puff pastry sheets
  • 250g Chicken breast
  • 350 g frozen mixed diced vegetables (corn,carrot,beans)
  • 2 tbsp olive oil
  • 1 Onion
  • 2 tbsp Tomato paste
  • 1/2 tsp Oregano
  • 1 tsp Salt
  • 1 tsp pepper
  • 1 egg yolk
  • 1/2 tsp black seed

Instructions:

  1. In a pan, add oil and toss in the chopped onion and saute till it turns translucent.
  2. Add diced chicken breast and when the chicken is almost cooked, add in the frozen mixed vegetables.
  3. Add tomato paste, salt, pepper and oregano, mix them well.
  4. Once its cooked fully, put off the flame and let it cool.
  5. Fill the pastry sheets with the filling and fold it in desired shape, brush with egg yolk for beautiful color and sprinkle with black seeds.
  6. Place them on a baking sheet and bake in a preheated oven at 200°c for 20-25 minutes.

Ramadan Special Series, Recipe 9 – China grass Sharbat

China grass sharbat is one of my childhood favorite which a is perfect coolant for summer and ideal for Ramadan. Make this drink when you need something cool and refreshing. It’s a multi textured dessert beverage with various cooling and delicious components. So, make the most of the warm weather this summer with this delicious refreshing drink.

Ingredients

  • 1/2 litre water
  • 2 grams china grass ( or place the whole china grass strip on finger vertically and measure till 1st division of finger approx. and cut horizontally, for 2 grams)
  • Food colors, red, blue, yellow (or color of your choice)
  • 1 litre milk
  • 3 Tbsp basil seeds
  • 1/2 cup vermicelli
  • 1/2 cup milk powder
  • 1 cup sugar (or as per your taste)
  • 1 tsp vanilla essence
  • 1 tbsp rose water
  • Chopped Almonds with skin (roasted)
  • 5 scoops vanilla ice cream

Instructions

Step 1, Preparation of China Grass

Bring water to boil, add china grass strips and 1 tbsp sugar. Continue boiling until strips get dissolved.

Now divide this liquid into 3 to 4 parts in different glasses ( depending upon the number of color you are using) add different food colors to the all the glasses.

Strain the liquid into the plates as shown.

Let it set at room temperature for at least 1 hour. Now cut them into small cubes and set aside.

Step 2, Make the vermicelli or sev, following the instructions on the packet. Set aside

Step 3, Soak basil seeds in one cup water for 10 minutes and set aside.

Step 4, Pour milk in a vessel, add sugar and Milk powder, mix well.

Step 5, Now add soaked basil seeds, cooked vermicelli, chopped china grass cubes, vanilla essence, rose water, chopped almonds and combine well. Lastly add vanilla ice cream and served chilled.

Ramadan Special Series Recipe 8 – Kerala Style Chicken Chatti Pathiri

Chicken chatti pathiri is very famous in North Malabar usually prepared during the Ramadan season. Kerala style chicken pathiri is a layered all purpose flour dosa with shredded chicken that is cooked in a pan until little crispy.

Ingredients

  • 350 grams Chicken , minced
  • 1 sprig Curry leaves
  • 1 inch Ginger , chopped
  • 4 cloves Garlic , chopped
  • 1 Onion , sliced
  • 1 teaspoon Turmeric powder (Haldi)
  • 2 teaspoons Red Chilli Powder
  • 2 teaspoons Garam Masala Powder
  • 1 teaspoon Black pepper powder
  • 5 tbsp Oil , for cooking
  • 1/2 cup Whole Wheat Flour
  • 1/2 cup All Purpose Flour (Maida)
  • Salt , to taste

Instructions:

  1. First heat a saucepan over medium heat. Add oil, once the oil gets heated add curry leaves and allow it splutter. Add ginger & garlic paste and saute for few seconds. Now add green chilly and saute for few more seconds.
  2. Add sliced onions and fry them till they turn translucent. At this point you can add minced chicken along with all the spice powders – turmeric powder, red chilli powder, garam masala powder, pepper powder, salt and combine well. Saute well till the chicken is cooked. Keep it aside.
  3. To make the pathiri batter, in a mixing bowl, combine all purpose flour with enough water and salt to make a smooth batter. Make medium size dosas. While making dosas dont cook both the sides, cook each dosas for 30 seconds. Repeat the same process till you finish the batter, to make enough crepes for layering.
  4. Now for layering take 4 eggs beated to dip the dosas.
  5. Grease the saucepan with oil and place over low heat. Place the egg dipped dosa in the pan and spread chicken filling evenly over the dosa. Dip the second dosa in the egg and place over the chicken filling. Repeat the layering for 4 dosas. The top layer should be covered with dosa. Cover the pan with a lid and let it cook for 5 – 10 min.
  6. Now carefully flip it over and roast it on the other side(gently place the top part on the pan). Cover the pan with a lid and let it cook for 5 – 10 min. Turn off the flame. 
  7. Now its ready to serve this hot Kerala style chicken chatti pathiri to enjoy your Iftar time.

Ramadan Special Series Recipe 7 – Kheer

Kheer is a delicious rice pudding that is made from milk, basmati rice and nuts. Kheer was first introduced to me by my Pakistani neighbour. She would make them during Ramadan and bring it home for iftar. Aunt’s kheer was loved by everyone at home, she made the best kheer one could have. Later, I had kheer at restaurants and even at some parties but nothing would match that tasty kheer she made.

I am happy to include that delicious Kheer recipe with you in this Ramadan special recipe series. It’s easy to make, requires few ingredients and tastes amazing. What are you waiting for, lets cook kheer.

Ingredients:

  • 1 litre milk
  • 1 serving spoon Basmati Rice
  • 5 tbsp Sugar
  • few saffron strands (optional)
  • 1/2 tsp cardamom powder
  • 1 cup mixed nuts (almond, pistachio, cashew)

Instructions :

  1. Grind the nuts in a food processor.
  2. In a pan, bring milk to boil and add soaked rice (20 minutes) and cook on medium flame while stirring the mixture.
  3. Once it starts getting thick Add sugar, saffron and nuts into the kheer and keep stirring continuously.
  4. When it reaches the desired consistency, add cardomom powder and Garnish with chopped nuts. Rice Kheer is ready to be served!

Note: Rice kheer tastes best when chilled. Adjust the amount of sugar according to your preference.

Ramadan Special Series, Recipe 6 – Seekh Kebab

Why have abs when you can have kebabs!!! These soft and succulent Seekh Kebabs are the best thing you would try which will give you that restaurant quality taste you have been missing these days. Try Out, these rich and flavorful Seekh Kebabs of your dreams.

Ingredients

  • Ground Meat (without moisture) – 0.5 kg
  • Papaya paste – 1 Tbsp
  • Crushed Onions (without moisture)- 1/4 cup
  • Ginger paste – 2 Tsp
  • Garlic paste – 2 Tsp
  • Green chili paste – 1 Tbsp
  • Salt – 1 Tsp
  • Cumin powder – 1 Tsp
  • Chat Masala – 1 Tsp
  • Garam Masala – 1 Tsp
  • Red chili powder – 2 Tsp
  • Coriander powder – 1 Tbsp
  • Chopped Coriander leaves – 2 Tbsp
  • Butter – 2 Tbsp
  • Roasted Gram Flour – 3 Tbsp

Instructions

1 Add all ingredients in ground meat.

2. Mix all the ingredients very well and allow it to rest for 15- 20 minutes.

3. Now take, skewers (or straws or spoon handle), wet your hands with oil. Take a small portion of prepared ground meat mixture and coat it along the skewer in cylindrical shape. Make sure the mixture is evenly spread.

4. Now put oil/butter in a pan. Now slowly push the kebabs off the skewers on to the pan.  Keep rotating it every 2-3 minutes so that all the sides are cooked nicely. Cook till it becomes golden brown on all sides.

5. Serve hot with Mayonnaise/ Garlic Sauce.

Ramadan Special Series Recipe 5 – Kakka Rotti

Is this a time for having Kakka Rotti? Yes, Absolutely! As Ramadan is started its a time for having Kakka Rotti.

Kakka Rotti is a famous delicious meal, which is popular in Malabar. Malabarians usually prepare Kakka Rotti on special occasions like ramdan. It is a special iftar dish for all chicken and mutton lovers, So I have presented it now during our ramadan season.

It is a combination of steamed rice dumplings in a meat or chicken based gravy. Steamed rice dumplings are mixed with a delicious meat or chicken based gravy which consist of little amount of spices and other ingredients. Both the items are cooked separately but mixed together last so the dumplings has the flavour of these delicious gravy.

For the Dumplings:

  • Roasted Rice flour – 1 cup
  • Grated coconut – 1/4 cup
  • Shallots – 8
  • Water – 1 and 1/4 cup
  • Fennel seeds – 1/4 Tspn
  • Salt – as required
  • Oil – 1/2 Tspn

For chicken gravy:

  • Boneless chicken – 1 cup (small pieces)
  • Ginger – 1 small piece
  • Garlic – 3 cloves
  • Turmeric powder – 1/4 tspn
  • Pepper powder – 1/4 tspn
  • Red chilly powder – 1 and 1/2 Tspn
  • Coriander powder – 1 tspn
  • Garam Masala – 1 Tspn
  • Grated coconut – 1 cup
  • Onion – 2 medium
  • Green chilly – 3
  • Tomato – 1 medium
  • Fennel seeds – 1/2 Tspn
  • Curry leaves – as required
  • Coriander leaves – as required
  • Salt – as required
  • Oil – 4 Tbspn

Step by step method

Step 1 – Start making Dough: Add salt and rice flour to the boiling water and mix well continuously. Switch off the flame. Mix and make a thick smooth dough.

Optional: For more taste grind coarsely grated coconut, shallots and fennel seed. Add salt, grounded coconut paste and rice flour to the boiling water and mix well continuously. Switch off the flame. Mix and make a thick and smooth dough.

Step 2 – Start making Balls: Grease your palm with little oil and make small balls. Slightly press the centre of the balls with your finger tip to give its shape. Steam this for 25-30 minutes and keep it aside.

Step 3 – Start making Chicken Pieces: Cook the chicken pieces by adding salt turmeric powder and pepper powder. Once cooked keep it aside.

Step 4 – Start making Coconut Paste: Grind coconut, fennel seeds and turmeric powder to a smooth paste by adding little water and keep it aside.

Step 5 – Start making the Gravy: Heat coconut oil in a pan. Add curry leaves, crushed ginger and garlic, green chilly and onion and saute it for few min. Add tomato and saute well. Now add red chilly powder, coriander powder, turmeric powder, garam masala powder and salt as required. Mix everything and roast well. Add cooked and crushed chicken and grounded coconut paste to it. Mix well with masala and allow it to boil. Now your gravy is ready.

Step 6 – Serve and taste your delicious Kakka Rotti: Transfer cooked rice dumplings to the delicious gravy and mix well. Allow the gravy to get dry. Tasty Kakka rotti is ready to serve.

The body of this device is very small by today’s standards but it’s pretty refreshing to have a thin and lightweight phone and it is surely noticeable. The logo has moved down to the middle of the phone to match all the new iPhones. Speakers are at the base, paired with the earpiece. There are gigantic top and bottom black bezels with a classic home button on the bottom with a fingerprint sensor. There are 3 colours for iPhone SE i.e red, black and white.

Display

iPhone SE has a small 4.7 inch LCD display with huge bezels. The display doesn’t get bright as new generation phones, outdoor visibility is poor and display doesn’t double-tap to wake. It does have a 60 Hz refresh rate which is not a bad deal for 400 dollars phone. But if you are someone who prefers the full screen/infinity display over high-end processor then this phone is probably not be for you.

Camera

There is a single 12 MP wide-angle camera system around the back with f/1.8 aperture and 7 MP front camera with an f/2.2 aperture. iPhone SE has 8 portrait lighting features, selfies come out pretty good.  The iPhone SE’s camera can record 4K video at up to 60 frames per second with optical image stabilization and support for slow-mo video and time-lapse video. There is no night mode but this camera is way above average for this price.

Battery and Storage

Apple iPhone SE has the tiny battery of 1821 mAh, considering the fact that the phone is small and has comparatively short display it should be good for one day use with a single charge. Battery life is good and it has a great stand by time as most iPhone’s do. Phone ships with a 5 Watt charger and it does have wireless charging with no fast charging feature. It will take 2 hours to charge the phone to 100%.

iPhone SE comes in three different configuration i.e 64 GB/ 128 GB/256 GB. If you are buying the iPhone SE, I recommend you to spend the extra 50 bucks to get a 128 GB of storage instead of 64 GB. That being said, a lot of stuff can be stored at the cloud, can offload apps and keep all of that stored virtually.

Performance

The reason iPhone SE is really impressive is that inside it has the exact same processor as the iPhone 11 Pro. It’s the A13 Bionic, which means the phone is really fast for sure and it is sure to get OS updates for many years to come. The performance in this phone is insane because of A13 Bionic chipset and extra RAM which is absolutely fly through iOS on 720p display and it comes with IP 67 water and dust resistance which is pretty good but not the best.

Overall, this phone checks all the basic necessary selling point. Apple essentially delivered one of the value phones of the year in a long time. You don’t buy the iPhone SE for its revolutionary new design, you buy it for its price tag.

Ramadan Special Series Recipe 4 – Corn Cheese Balls

Corn cheese balls are easy to make and absolutely delicious. This veg snack recipe is filled with flavours and is a favourite among the crowds. The recipe includes cheese, but you can easily turn it into a vegan recipe by substituting cheese with Diya cheese (vegan cheese).

This is a great recipe to make ahead of time and freeze for later use. You can even bake these to make them a little more healthy.

Ingredients:

  • 1 cup corn
  • 1 +1/2 bread
  • 1 green chilli
  • 4-5 stem coriander leaves
  • 1/2 tsp salt
  • 1/2 tsp red chilli powder
  • 1/2 cup shredded cheddar
  • 1/2 cup shredded mozzarella

For coating:

  • 1/2 cup all purpose flour
  • pinch of salt
  • pinch of red chilli powder
  • Bread crumbs

Instructions:

  1. Add all the ingredients except for cheese and grind it on pulse or use a processor.
  2. Transfer into a bowl and fold the cheese in until well combined. make them into balls
  3. In a cup, add the flour, salt, chilli powder and little water and mix to turn it into a paste.
  4. Dip the balls into the flour mix and coat with bread crumbs.
  5. Freeze it at this point or deep fry it right away
  6. You can also lightly brush it with olive oil and bake it at 180°c from 35 minutes.
